A blend of the best vineyards of the estate, 45 years old, certified organic, 70% of which are located around the village of Trilofos at an altitude of 150-250 meters. The remaining 30% comes from the village of Fyteia at an altitude of 450-650 meters.

Microclimate
The climate in the region is characterized as warm-continental, with winds from both the sea and Mount Vermio playing a crucial role during the ripening period, keeping the temperatures of the grapes low for the season while maintaining their health. The high-altitude vineyards maintain an even lower average temperature due to the larger temperature difference between day and night, as well as the cooler and stronger winds.

September 20th – October 10th
Vinification
The extraction lasts for 40 days with 40% whole clusters. Fermentation begins with indigenous yeasts and lasts 2 to 3 months.
Maturation
French oak barrels (500lt), 2nd – 3rd use, for 18 months.

Mikroklima
Das Klima in der Region wird als warm-kontinental charakterisiert, wobei die Winde sowohl vom Meer als auch vom Berg Vermio eine entscheidende Rolle während der Reifung spielen, indem sie die Temperaturen der Trauben niedrig halten und gleichzeitig ihre Gesundheit fördern. Die Weinberge in höheren Lagen haben aufgrund des größeren Temperaturunterschieds zwischen Tag und Nacht sowie der kühleren und stärkeren Winde einen noch niedrigeren Durchschnitt an Temperaturen.

Vinifikation
Die Extraktion dauert 40 Tage mit 40% ganzen Trauben. Die Gärung beginnt mit einheimischen Hefen und dauert 2 bis 3 Monate.
Reifung
Französische Eichenfässer (500 l), 2. – 3. Nutzung, für 18 Monate.
