VINEYARDS: Certified organic throughout the region of Naoussa at an altitude up to 400m and the average age of vines is 25 y.o.
SOILS: Limestone based with granite and schist sub-soil.
CLIMATE: Warm Continental climate with hot summers and mild to cold winters. The constant breeze from the mountains in addition with the altitude play a crucial role in the ripening process of the grapes. Hail storms and wild boars are the main hazards during the growing season.
VINIFICATION: Harvest 19th of September to the 10th of October. Maceration lasted for 25 days and fermentation occurred with indigenous yeasts and was completed after 1-2 months.
OAK MATURATION: 12 months on used oak barrels (500lt).
TASTING PROFILE: Very classic on the nose, with the trademark sundried tomato and olive past combination, expressed with remarkable clarity. Similarly clear, almost linear, on the palate, with consistent aromatic, and hint of sweeter red fruit.

Weinberge: Zertifiziert biologisch im gesamten Gebiet von Naoussa, in einer Höhe von bis zu 400 m, mit einem durchschnittlichen Alter der Reben von 25 Jahren.
Böden: Kalkhaltig mit Granit- und Schieferuntergrund.
Klima: Warmes kontinentales Klima mit heißen Sommern und milden bis kalten Wintern. Die konstante Brise aus den Bergen in Verbindung mit der Höhe spielt eine entscheidende Rolle im Reifungsprozess der Trauben. Hagelstürme und Wildschweine sind die größten Gefahren während der Wachstumsperiode.
Vinifikation: Ernte vom 19. September bis 10. Oktober. Die Maischezeit dauerte 25 Tage und die Gärung erfolgte mit einheimischen Hefen und wurde nach 1-2 Monaten abgeschlossen.
Eichenreifung: 12 Monate in gebrauchten Eichenfässern (500 l).
Geschmacksprofil: Sehr klassisch in der Nase, mit dem typischen Aroma von getrockneten Tomaten und Olivenpaste, das mit bemerkenswerter Klarheit ausgedrückt wird. Ebenso klar, fast linear, am Gaumen, mit konstanten Aromen und einem Hauch von süßerem roten Fruchtaroma.
